Cheryl Paswater is the Chief Fermentationist of Contraband Ferments and Functional Medicine Health Coach as well as an educator, sous chef, artist, and a writer. She co-organizes the New York City Ferments Meetup and NYC Fermentation Festival. She has been a contributing writer for Edible Magazine as well as a contributor to the book “Miso, Tempeh, Natto” and is currently working on her first book on fermentation due out sometime in the near-not so near future. You can find her teaching workshops and speaking on fermentation and health at in person workshops, online classes, and at festivals both regionally and internationally. She splits her time living in Brooklyn, NY and Richmond, VA with her partner, cat named Koji (which means “moldy rice”) and all of her cultures as pets (aka: bacteria, yeast, and mold).

Daniel is a ray of sunshine on a cloudy day. If the kombucha doesn’t give you that “morning to pick me up”, his ear to ear smile will do the trick. Oh and that delicious kombucha you are drinking right there…ya he guides and helped us make it with his own bare sanitized hands and more than a decade of expertise. I’d say my loves are: travel, dance music, food, african drums, and full nature immersions Beyond his musical prowess he’s just an all around passionate human being that enhances the culture of whatever group he’s in. On most days you can find him exploring and working to expand and maintain the various systems that keep the brewery alive.
He helped us develop the process of kombucha production from Florida to India, including research and development, raw material sourcing, production equipment development, fermentation process, bottling, flavoring, filling, labeling and so on.
Post Graduate in Human Genomics, expert in cell culturing, media preparation and various research projects. "From decoding the human genome sequence...To decoding the perfect recipe of the drink...she is someone who works as hard or as diligently RTB would not be where it is today without her. She wanted to make the drink viable for kids, toddlers.The Goal was lower sugar, Lower acid,Low Caffeine, and herb-infused from her own garden. After tireless trials of success,failures , pH readings she brewed a perfect concoction,scientifically controlled. Subtle,Sophisticated, crisp and refreshing to suit the taste buds of a toddler as well as adults.
Graduate in Chemistry (Science) and pursuing Masters apart from other Fermentation courses this much needed brew scientist and QA & research expert. Early in the morning when the brewery is quiet; you can hear the kombucha bubbling. Ritika is diligently visiting every glass jar to collect samples, and take the readings while cantillating Himachali songs, and hugging and greeting each SCOBY. If you were wondering how we put love into our booch this is the tried and true method. Love and care is our secret ingredient.
